Chèvre
Our chèvre is a simple but delicious fresh goat cheese. It is highly versatile, delightfully fresh on its own or in a variety of dishes, from crudités to desserts. Enjoy it fresh or mixed with dried herbs to create a sweet, savory spread for crusty bread or crackers.
Pairs with wheat beers, Chardonnay, arugula, fresh heirloom tomatoes, figs, fresh berries, and honey.

Poet's Tomme
Poet's Tomme is an aged cow's milk cheese that is 'washed' with The Poet from our friends at New Holland Brewery. The exterior has a malty, yeasty aroma that balances the bright lactic and slightly salty notes of the interior. Aged a minimum of 60 days.
Pairs with brown ales, beef, mushrooms, and walnuts.

LaMancha MOO
LaMancha MOO is a Camembert style, soft ripened cheese made from Jersey cow’s milk . The name of this lovely cheese is a hat tip to our friends at MOO-nique Dairy. This beautiful bloomy rind has a snowy white coat that reveals a buttery yellow interior when sliced. The interior of this beautiful cheese becomes a deep yellow in the spring and summer and the flavor develops into rich, grassy notes.

Lily Rose
Lily Rose is goat’s milk Camembert style cheese, made when the goat's milk is plentiful, in spring and summer. The goats eat a diet rich in grasses, clover and flowers during these seasons. This cheese has a sweet, floral quality that is evident as soon as the cheese begins aging. It ages for 3-4 weeks while the interior becomes soft and the exterior develops earthy, mushroom aromas. It ripens faster than its cow’s milk counterpart.
It can be enjoyed with more body and others like it aged longer with a tangier finish.

Noella
This versatile cheese has many of the properties of an alpine cheese. It is made with rich Jersey cow's milk and is perfect as a cheese for a fondue or in a melting iron. Noella is fully ripe at 5-8 weeks when the flavor and aroma are sufficiently developed. The texture is smooth and supple with some resistance to the bite. As it melts, the flavor reveals a slight acidity and a marinated saltiness.

Mattone
Mattone is a Taleggio-style, Jersey cow's milk cheese that is brick-shaped. The rosy exterior is normally dotted with grey and green mold and the interior is a pale straw color. Very creamy with a musty sweet and salty tang. Pairs with farmhouse ales, Pinot Noir, risotto, polenta, tomatoes, and salad greens.
$25.00 per pound. A brick is 3-4 pounds.
