Pyramid Pointe is a soft-ripened cheese made from pasteurized goat's milk. It has a pyramid shape with a natural grey/white rind which is blackened with ash. The pâte is smooth, moist and very white when it is young. The aroma is earthy with light citrus notes. The flavor is mild with a sharp lemony finish. Ripening travels from the rind to the interior and the flavor becomes more pronounced as it ages. It can be eaten after curing for 7-10 days and can be kept for up to 6 weeks. When dried, it can be used as a grated cheese to enhance various dishes. LaMancha Moon is a camembert style, soft-ripened cheese made from pasteurized goat's milk. Its shape is round with a predominantly white rind that can have some tan-colored mottling. The pâte is white and ages from the rind inward, becoming softer as time goes on. The flavor is mild and clean with a tang of mushrooms and becomes more complex as it ages. It can be eaten after curing for a minimum of 3 weeks and up to 8 weeks, depending on individual taste. Fresh Chčvre is a fresh, sharp cheese made from pasteurized goat's milk. It is a short, tapered round shape with a white exterior. The pâte is snowy white with a soft, spreadable and creamy texture. The flavor is mild with lemony and slightly salty notes. It can be eaten fresh after curing for 3-4 days up to 21 days. April Showers is a cheese made in small batches from Grade A Jersey cow's milk from a dairy farm near us. The interior is a thick and soft pate with some citrus notes while the exterior has an earthy tang followed by a sweet and buttery finish. It takes a minimum of two weeks to age and is good for a minimum of one month up to two months depending on taste. |
