Pyramid Pointe
April Showers is a chaource style, bloomy rind cheese made from pasteurized Jersey cow's milk.It is cured a minimum of 3 weeks. It has a thin white rind with orange streaks. The rind has an earthy flavor. The interior is buttery yellow with a sweet flavor with citrus notes. It melts in the mouth like newly fallen snow.

Pyramid Pointe is a soft-ripened cheese made from pasteurized goat's milk. It has a pyramid shape with a natural grey/white rind which is blackened with ash. The pâte is smooth, moist and very white. The flavor is earthy with light citrus notes. The flavor is mild with a sharp lemony finish. Ripening travels from the rind to the interior and the flavor becomes more pronounced as it ages. It can be eaten after curing for 7-10 days and can be kept for up to 6 weeks.
Fresh Chèvre is a fresh, sharp cheese made from pasteurized goat's milk. The pâte is snowy white with a soft, spreadable and creamy texture. The flavor is mild with lemony and slightly salty notes. Poet's Tomme is a semi-hard, washed rind cheese made from Jersey cow's milk. The rind has a rich carmel color with interesting yeasty, mushroomy aromas. The interior is semi-hard with with tiny eyes that are evenly distributed. salty bite balanced with delicate bright and lactic tones. Once cut, it can be held as long as it is wrapped in cheese paper or vacuum packed.
